Brown rice risotto with asparagus chicken stock + grated Roma cheese.

Baked Japanese-style turkey hamburger with onion and carrot; garnished with Goma and Ponzu sauce.

The brown rice took longer than expected (Electric rice steamer for the win), but everything turned out absolutely delicious. I could tell because Larry ate twice as much as he usually does for dinner.

Cooked dinner tonight: Homemade pesto sauce and Trader Joe's wheat linguini + shredded Dittmer's smoked chicken legs + wild baked salmon.

Thoughts: Toasted almonds are a viable and economic substitute for pine nuts. Needs more olive oil (don't want to add fatty cream) to make the pesto smoother. Used fat free mozzarella rather than Parmesan for health reasons. Will try it the right way next time. Also, wheat pasta just doesn't taste as good, although it is more filling.

Dad: "Do you know how hard it is to save money? Half of American kids borrow through college and grad school and owe the Government 50-100K by the time they're done. The lucky ones like you will make 100K a year. Obama takes 30% of that and California takes 10%. You scrimp and just maybe you'll save 10,000 a year. A small house around here is 1 million. Figure it out."

By promising to leave me a little something and ensuring that I finish law school debt free, dad has supposedly put me ahead of the field by 20 years. Talk about blessings that come with pressure.

Diet: Cal has entered an era of low-carb super high protein dieting. That means chicken breast, whey protein powder, and cottage cheese. Sodium free fat free cottage cheese tastes... apathetic. I enjoy the texture but add blueberries or honey for taste. Two cups before bed. Stuffy, but I seem to sleep better.

The bike ride around SF (I forgot whether I shared about this) went really great, all things considered. I was still too chicken to ride across the bridge due to my genuine fear of heights. There were also huge winds that day, up to 35 mph, which made riding almost a hazard.

Cooking: Coming up; Blanched broccoli salad. With grapes rather than raisins, olive oil rather than mayo, hot coppa rather than fried bacon. It's for a potluck. Google wiki informed me that pretty looking and healthy dishes are a big hit, and Italian always goes first. Let's hope that's true even for 60 year old Taiwanese folks.

CCS: Two ideas simmering: Sonomi visits the Company shrink to talk about her inappropriate fantasies about Fujitaka her issues. 2, what happens when Touya "introduces" Tomoyo to Fujitaka.

Hetalia: The Star Bangled Banner, America's Anthem, was officially recognized in 1931. The lyrics were from a poem, the tune was from a BRITISH DRINKING SONG. I learned that listening to FM 102.1 Classical. Special Relationship indeed.

Mood Theme: I'm starting to use a mood theme someone made. It's 10th Division Bleach: Matsumoto and Hitsugaya. I still love them.

Summer school and work: For two and a half months I expect to receive... 1K. Not even rent. Mreh...

SF Symphony: Will perform BEETHOVEN, Mozart, Tchaikovsky, and RACHMANINOV's Piano Concerto #2 (Nodame Cantabile peeps), which is my all time favorite piece of music in July. Am considering skipping a day of work to attend Rachamaninov.

Edit: Goal in Life: Save up. Retire. Rent property in a Japanese city for 1 year, experience the four seasons, taste and cook the local delicacies, dip in all the hot springs, then move on to another city. Repeat.

Guess I better be a class-action lawyer: One big one and I'm done.

Edit2: Ever seen Chobits? CLAMP's manga/anime about a robot chick? Here's the popular Opening with pitch altered so it sounds like a boy band singer sang it.



Actually... what if CLAMP changed their mind and Chobits became a story about a college girl finding a robot boy in the dumpster?? Wow... that would be... amazing. I mean, just the issue with the all-important reset switch would blow minds.

I can't believe I'm saying this, but I'm going to miss Legal Research and Writing now that it's finished. The course kicked my ass, but its definitely the class in which I learned the most about being a lawyer. Pulled a all-nighter finishing the final 12 page Memorandum of Points and Authorities (In support of plaintiff motion for summary judgment); didn't do as well as I did on the practice, but mreh. I might not get the A I want (only two of those allowed due to the curve) but I hope I'll get a big improvement over my C- in the first semester.

After turning in the final USF had one of its bagel days in the student lounge; mounds of Noah's bagels and all sorts of spreads. This time they even had jugs of hot coffee in several varieties. The coffee tasted delicious after being awake for so long. I had 3 cups. Probably not going to sleep well tonight.

Note to self: Artificial sweetener is way more potent than regular cane sugar.

Rewarded myself by going shopping and feeding myself. Like I said I rarely eat out when I'm on my own, plus I already went out a few times with my bro this weekend. Decided to cook Mapou tofu. Here is my recipe:

Cal's Ridiculously Humongous Mapou Tofu

Ingredients:
Two bundles of green scallions
4 boxes (4 lbs) of tofu, two soft two firm
2 lbs of ground pork
2 packets of imported Japanese mapou tofu seasoning (liquid)

Directions: Follow the directions on the back of the seasoning box.

Budget: 11.50 dollars. Half of which went to the seasoning, kind of rediculous.

Makes: 7 pounds of soupy, very watered down Mapou tofu. Add Tobasco or Vietnamese red hot chili sauce to taste.

Thoughts: As expected, even at "spicy" the Japanese stuff is weak, especially since the recipe called for 4-5 boxes of the seasoning mix for the amount I was cooking.

This should last me for about 6 days.

Also, a bonus recipe:

Cal's Ridiculously Simple and Wonderful Steamed Eggs
Ingredients:
2-3 eggs
2-2.5 times as much water as eggs
a splash of soy sauce/or pinch of salt
Bit of Hondashi powder if you've got it
Bit of sesame oil if you've got it

Budget: Negligible, if you forgo the bonus stuff or already have them in your pantry.

Directions: Combine all ingredients and whisk the eggs as smooth as possible in a round bowl. Boil water in a pot and put in bowl; let steam 10 minutes or until egg is mostly solid. Remove and eat. The bowl will be easier to take out if the size difference between the bowl and pot is generous.

Thoughts: This method of cooking makes the eggs much more voluminous, filling, and satisfying. Also has the advantage of not being greasy (fried, scrambled). My comfort food since kindergarten which I've rediscovered lately
